The Story

Summer is here, and with the rising temperatures, we decided it was the perfect time to whip up a refreshing cold dish! As we scrolled through our Instagram feeds, we stumbled upon a video from @thesubversivetable that seemed to tick all the boxes: it fit our tastes, looked relatively simple, and seemed perfect for a warm day.

The recipe was for cold soba noodles made from buckwheat flour, boasting a chewy texture, and paired with a quick cucumber salad. We were on the hunt for something quick and easy, yet super tasty, hoping to add a new top contender to our Sunday Suppers lineup.

The ingredient list was pretty minimal. We only needed to pick up soba noodles and cucumbers from the store since we already had everything else on hand. No surprise there, given that it's an Asian dish and, well, we're both Asian!

Prep time was a breeze. It took just as long as cooking the noodles and rinsing them with ice-cold water. While the noodles were cooking, we sliced the cucumbers and prepared the sauces. That was basically it! Easy peasy!

After garnishing with sesame seeds and plating everything in my cool ceramic bowls, it was time to dig in. First bite. Second bite. Third bite. Bowl GONE. The noodles were deliciously satisfying—the semi-sweet flavor and cold temperature made them a delight to slurp down. The crunchy cucumbers paired perfectly with the sweet and spicy red flake packet sauce I dug out from my stash of extra to-go condiments, elevating the meal even more.

Scoring this dish was a no-brainer. While it lacked a bit in the miscellaneous category, it topped our charts in every other way, making it into our top 3 meals so far! As the night went on, we chatted about relationships, our boyfriends, and how life seems to be speeding by. We haven't hung out much outside of these dinners lately, but we're determined to make more time for each other this summer. Who knows, our next Sunday Supper might even be a joint one with our boyfriends!
