Ingredients
- 3 ripe bananas (medium/large)
- 8 tbsp softened, unsalted butter
- 1/2 cup granualted sugar
- 2 tbsp honey
- 2 eggs
- 1 1/2 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp vanilla extract
- 1/2 tsp salt
Method
- Preheat your oven to 350°F (175°C) and grease a bread loaf pan.
- In a large mixing bowl, cream together the softened (room temp) butter, sugar, honey, and vanilla extract.
- Gradually add the lightly beaten eggs to the creamed mixture, mixing well after each addition to ensure the batter is smooth.
- Mash the bananas with a fork until they reach the consistency of chunky applesauce. Fold the mashed bananas into the batter until well combined.
- Sprinkle the baking soda and salt over the batter and mix in gently.
- Gradually add the flour to the batter, mixing slowly until just combined and no visible clumps. Avoid overmixing.
- Pour the batter into the prepared loaf pan. Slam the pan down on the counter a few times to even out and settle the batter.
- Bake in the oven for at least 50 minutes, or until a toothpick or fork inserted into the center of the bread comes out clean.
- Remove the bread from the oven and let it cool in the pan for about 10 minutes.
Tips:
- The riper the bananas, the sweeter and more flavorful your bread will be.
- If you find your banana bread is too dry, try adding a tablespoon or two of milk or yogurt to the batter.
- Banana bread freezes well; wrap it tightly in plastic wrap and foil, and freeze for up to 1 month.

- 1/4 cup chopped walnuts
- 1/4 cup chocolate chips
- 1 tbsp sifted, culinary matcha
Method
- If adding walnuts / chocolate chips, fold them in before pouring the batter into the loaf pan.
- If adding matcha, add with the flour.
