Ingredients

  • 3 ripe bananas (medium/large)
  • 8 tbsp softened, unsalted butter
  • 1/2 cup granualted sugar
  • 2 tbsp honey
  • 2 eggs
  • 1 1/2 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt

Method

  • Preheat your oven to 350°F (175°C) and grease a bread loaf pan.
  • In a large mixing bowl, cream together the softened (room temp) butter, sugar, honey, and vanilla extract.
  • Gradually add the lightly beaten eggs to the creamed mixture, mixing well after each addition to ensure the batter is smooth.
  • Mash the bananas with a fork until they reach the consistency of chunky applesauce. Fold the mashed bananas into the batter until well combined.
  • Sprinkle the baking soda and salt over the batter and mix in gently.
  • Gradually add the flour to the batter, mixing slowly until just combined and no visible clumps. Avoid overmixing.
  • Pour the batter into the prepared loaf pan. Slam the pan down on the counter a few times to even out and settle the batter.
  • Bake in the oven for at least 50 minutes, or until a toothpick or fork inserted into the center of the bread comes out clean.
  • Remove the bread from the oven and let it cool in the pan for about 10 minutes.

Tips:

  • The riper the bananas, the sweeter and more flavorful your bread will be.
  • If you find your banana bread is too dry, try adding a tablespoon or two of milk or yogurt to the batter.
  • Banana bread freezes well; wrap it tightly in plastic wrap and foil, and freeze for up to 1 month.

Optional Toppings

Ingredients

  • 1/4 cup chopped walnuts
  • 1/4 cup chocolate chips
  • 1 tbsp sifted, culinary matcha

Method

  • If adding walnuts / chocolate chips, fold them in before pouring the batter into the loaf pan.
  • If adding matcha, add with the flour.
